Warm Bacon and Coffee Vinaigrette

Complex and delicious, this warm bacon and coffee vinaigrette adds an all-new depth to any salad. The delightfully unexpected taste of coffee blends perfectly with the richness of bacon and brightness of vinegar. If you are entertaining, this vinaigrette is sure to be a conversation piece! 

Yields: 2 cups


  • 6 ½ oz bacon, diced
  • 2 oz olive oil
  • ¾ oz shallots, minced
  • 1 tsp garlic, minced
  • 2 tsp brown sugar
  • 1 ½ oz sherry vinegar
  • 1 French Roast BREWSTICKS packet

In a pan over low heat, render the bacon until crispy. With a slotted spoon or strainer scoop out the bacon and set aside, you should have about 2 ounces of rendered fat. Turn off the heat and add the shallot and garlic, stir for one minute. Add on the rest of the ingredients and whisk until completely incorporated. Season with salt and pepper and serve warm over spinach or hearty salad greens, like radicchio or frisee.
