Nothing says breakfast like pancakes. Add the flavor of coffee to your pancakes and it takes breakfast to a whole new level! This rich and decadent recipe melds the sweetness of chocolate chips with Crème Brûlée BREWSTICKS coffee for a multi-layered flavor profile. Coffee, caramel, vanilla, chocolate and maple syrup meld together perfectly for an unforgettable start to your day.

Yields: 10-12 pancakes

  • 4 eggs, yolks and whites separated
  • 1 cup buttermilk
  • 1 cup milk
  • ¾ cup vegetable oil
  • 8 oz all purpose flour
  • 8 oz pastry flour
  • ½ tbsp of vanilla extract
  • 1 ¼ tbsp of baking powder
  • ¾ cup sugar
  • ½ tbsp of salt
  • 1 cup chocolate chips
  • Crème Brûlée BREWSTICKS packet

Sift all dry ingredients into a large bowl. Combine all wet ingredients minus the egg whites in another large bowl. Whisk egg whites to soft peaks. Whisk wet ingredients over the dry ingredients until completely incorporated (do not over mix or pancakes will be tough). Fold in the egg whites with a rubber spatula until completely incorporated.
Heat up a griddle or small pan to medium temperature, spray your cooking surface with non stick spray and pour 4 oz of batter. Immediately sprinkle with chocolate chips. Once that side is golden brown flip pancake and cook until done. Serve with maple syrup or honey and enjoy.
