Makes 4 cups
- - 5 large ripe tomatoes, seeded (save juice)
- 1 oz. garlic, finely minced
- - 2 ea shallots, finely minced
- - 3 fl oz. red wine vinegar
- - 2 fl oz. honey
- - 2 sprigs thyme
- - 2 oz brown sugar
- - Salt & pepper to taste
Combine all ingredients in a large pot. Simmer on low until tomatoes are cooked and broken down. Place in a blender and blend on high for 1 minute.
