Tomato Jam

A sweet and savory combination that would be a perfect breakfast condiment or a garnish for an after dinner cheese platter for your guests.  Also, its stunning red color adds a beautiful element to any dish. 


    Makes 4 cups
    • - 5 large ripe tomatoes, seeded (save juice)
    • 1 oz. garlic, finely minced
    • - 2 ea shallots, finely minced
    • - 3 fl oz. red wine vinegar
    • - 2 fl oz. honey
    • - 2 sprigs thyme
    • - 2 oz brown sugar
    • - Salt & pepper to taste

    Combine all ingredients in a large pot. Simmer on low until tomatoes are cooked and broken down. Place in a blender and blend on high for 1 minute.
