Crab Salad with Tropical Fruit & Avocado Mousse

This light and fresh crab salad is perfect for the summer! With sweet mangos and an avocado mousse, this salad is sure to be a season hit. 

Makes 4 portions


  • 1# Fresh lump crab meat
  • 1 Mango, peeled and diced small
  • 1 small papaya, peeled, diced small
  • 3 jalapeño, diced small
  •  ¾ cup mayonnaise
  • Juice of 2 limes
  • 2 tablespoons cilantro, chopped
  • 2 avocados
  • ½ cup crème fraiche or sour cream

For avocado mousse:

  • Cut open the avocados, discard the pith, scoop out avocado meat and place in a blender
  • Add crème fraiche, salt and pepper, and lime juice
  • Blend for 1 minute
  • Add lime juice to taste

 For Salad:

  • Combine all ingredients in a bowl, fold them gently with a rubber spatula or spoon until fully combined
  • Season the salad with salt and pepper, add lime juice
  • Keep over ice until ready to serve.
