Costa Rica is considered among the top regions for coffee growing due to its optimal growing conditions. The coffee Diego Guardia produces at Hacienda Sonora is no exception. This farm exclusively processes its coffee through the natural and honey methods. Not only does this make the coffee delicious and flavorful, it also minimalizes the environmental impact by saving more than 3 gallons of water per pound of coffee when compared to the traditional washed process.
It takes a lot of electricity to run a coffee farm and Hacienda Sonora took it as a personal challenge to
minimalize the environmental impact that they have. To do this they employed a Pelton wheel in a nearby natural stream that produces electricity for 100% of the coffee farm operations and even a percentage of the electricity used by residents who live on the farm. In addition to helping the environment and producing amazing coffees, Diego also provides housing, utilities, and health insurance to all of his employees and their families.
The coffee we have chosen this time around is especially unique in that it is a post processed blend, of honey and natural coffees. This means that Diego takes a micro lot of coffee and processes it Naturally or by laying the coffee cherries out on beds to dry in the sun. Diego then takes a honey processed coffee, a coffee that has had part of its mucilage washed off then laid out on beds to dry in the sun. He then blends them together to create a unique taste profile.
