Antigua is a quaint old town about an hour drive from the capital of Guatemala. The city was founded in the 1500’s in a valley surrounded by volcanoes and earthquake faults. Over the centuries the city has endured through devastating volcano eruptions and earthquakes. The most notable and destructive earthquake was in 1717. Many of the colonial buildings including numerous churches were either destroyed or heavily damaged. Walking through town one can witness the ruins and culture. Today many of the church remain open despite the damage. The Mayan residents are friendly and have maintained their culture through the centuries. Antigua is a must see town on everyone’s bucket list.

Coffee is grown on the slopes of the Agua and Fuego Volcanoes surround the city. The rich volcanic soil provides nutrients for rich coffee. Antigua is known for producing award winning coffees. Finca San Rafael is a prime example of quality coffee having won numerous Cup of Excellence and other awards. 

Isidro Valdes is a kind, gentle man who is proud of his family and farm. His eyes twinkled when he showed us a three generation picture of his family. He proudly showed us a book about Guatemala that featured his farm. The farm awards were displayed in his living room. He was a gracious host serving us some of his coffee and touring the farm with us.

The coffee is 90% bourbon, grown under the shade of Gravilea trees. Each cherry is hand-picked at the peak of ripeness. Once harvested the cherries are taken to the wet mill located on the farm. They are pulped using naturally filtered water from the farm, and then fermented in pristine fermentation tanks. Once the coffee is pulped it is washed on unique baffled channels that reduce water usage. From the washing channels the coffee is moved to the drying patios where they are 100% sun dried. Coffee is then stored in a low humidity building. Cup quality is checked at the farm. Samples are sent to Anacafe for confirmation of the cup quality. Dry milling is done just prior to exporting in Guatemala City.
