Barnie's Vanilla Ube Cupcake Recipe

Let's have our cupcake and drink it, too, shall we? We decided to make Vanilla Ube cupcakes and a mini cake topped with delicious vanilla flavored icing. Yum. And they pair well with our Newest Limited Time Offering of Barnie's Vanilla Ube Swirl Coffee. Are you ready to go on a taste adventure?

INGREDIENTS:
Traditional Vanilla Cupcake Mix
1 1/4 cup of Water
1/2 cup of Vegetable Oil
4 Egg Whites
Ube Flavor Extract (2oz bottle)
Cupcake Tray or 13x9 inch Cake Pan
Vanilla Icing 

INSTRUCTIONS:

  1. Set your oven for 350 degrees Fahrenheit. Coat the bottom of your pan or cupcake tray or use a cupcake paper liner.
     
  2. Combine Cake Mix, water, oil, and egg whites in a large bowl. 


  3. Bake at 350 degrees Fahrenheit and follow the bake times for your cake pan or cupcakes depending on what you decide to make. We created both.
    13x9 inch Bake Pan at 34-38 minutes or 
    Cupcake Trays to make 24 cupcakes at 19-23 minutes
  4. Your cupcakes or cake is now ready if the toothpick inserted in the center comes out clean then your cake is done. Cool cake completely before adding the white creamy icing so that way it doesn't melt. 
  5. Once cooled, add your desired icing of choice. We chose Vanilla Frosting to really go with our new limited time flavored offering this season.
